Tastes: Decadence for One

I'm very excited to be back in the kitchen, this time with exciting new challenges and lots of fresh recipes. I absolutely adore cooking. It's therapeutic and good for the soul, as well as for the body. I love cooking big meals and feeding friends and family, but I also love quiet nights of just cooking for myself.

That being said, cooking for one can often be a challenge. It’s not always worth it to invest two hours and to dirty all your pots and pans to make a lavish meal for just yourself.

I think that’s why so many of my dinners have consisted of throwing some chicken and veggies into the oven and making some quinoa or couscous in bulk for the week. Less stress and less mess. But also, way less fun.

After about four months of repeating the same dinner or just caving and ordering in, I finally got sick of it and made a promise to myself to set aside one night every month to learn one new quick & dirty weeknight dinner.

I'm done with the boring dinners for one. No more baked, bland chicken. I want sugar & spice. I want all the variety that life has to offer, and I'll be damned if I don't get it.

This month, in honor of Valentine’s Day, I decided to go decadent. I went all out and made Broiled Lamb Chops with a Balsamic Reduction and Dark Chocolate Mousse from scratch.

Dinner took ten minutes from start to finish, and the mousse took thirty minutes to prep and an hour to set. Totally worth it. But next time I’m definitely going to level up my mousse by adding some vanilla to the cream and some sea salt and instant coffee to the chocolate. Mmmm.... can’t wait for next time. (Next time, however, won't be for a couple weeks at least. I've got too much leftover mousse in my fridge as it is. Must pawn it off to friends and neighbors...)
